Time to Start Eating Pumpkin Leaves

Have you ever steamed pumpkin leaves ?  I decided to steam pumpkin leaves with Pak Choi last week .  It's looks like spinach when cooked and it takes the flavor of the seasonings. Pumpkin Leaves are a staple in Nigeria ,popularly called 'Ugwu'.

The Pumpkin leaves are rich in Vitamin A, Vitamin C, Calcium and Iron. The leaves also lower cholesterol, they also have antibacterial effects ,the leaves also play a key role in the cure of anemia.  The high protein content in the leaves could have a beneficial effect on the body.  The leaves are a good source of different types of vitamins, minerals and rich in anti-oxidants, such as alpha-carotene and Beta–carotene which help to slow down ageing process.
